Zen-cuisine is not really about producing a certain kind of "kitchen mind", a state of calm or concentration. It's about our practice of looking and seeing what is present for us in this moment. Staying present and awake to experience, we don't let ourselves get lost in wandering thoughts, or in abstract discursive mind. We become aware of ourselves as we are and use each moment to accept and appreciate what is going on. We look deeply and see clearly with the whole body/mind. We are fully present in the kitchen, and the quality of that presence interests and enlivens us. Our practice is to be present, to notice and just be aware. Zen-cuisine is the possibility of being fully alive in the extraordinary ordinariness of our daily living.
